I've been doing a lot of work with the Bakery this past week, and it's starting to show off in spades. I've been meaning to get some new recipes up and on the site, so now I've got two new treats - Peanut Butter Balls and the seasonal Chocolate Peppermint Cuppies. Plus, now, I have really decent packaging, which I am very excited about, and you get to see them before I even deliver them to the customer tomorrow! :D

First up, the Peanut Butter Balls:

These were inspired by the Red Door Bakery's Peanut Butter Balls (located in Perry Sound). They work best chilled or even frozen, but even if they're room-temp, they're delicious - just a little gooey. As [livejournal.com profile] ravenworks noticed, they are not wholly Peanut Butter - there is coconut and crisped rice in there for a wonderful crunchy mouthfeel. A co-worker also noted that having semi-sweet chocolate is perfect, as milk chocolate would be too sweet.

Next up, the Chocolate Peppermint Cuppies:

These ones are replacing last year's Chocolate Bonbons, as I wanted to further push the Cuppies design. These are Chocolate Cookie dough with chocolate chips, filled with a mixture of White-Chocolate Fudge and crushed Peppermint Candies, and drizzled with coloured White Chocolate.

(In similar news, I recently made a chocolate cake topped with coloured letters made of white moulding chocolate. Most of the letters disappeared before any of the cake did!)

Now, onto the packaging. I've been talking with a company called Alpha Eagle Group to find packaging that can hold my Cuppies, and I brought them a container that seemed to work rather well. They found the exact same container and ordered a box of them, which should be delivered either tomorrow or Monday, so I have to make a trip out to pick them up. This will be a vast improvement over the Coffee Bags that I was using, and this way the soft Cuppies don't crush each other!

After I get the packaging, the next stop is to get a place to make labels. I found a place that seems to sell them for a decent price, and I figure I can make a bunch of different batches for the different flavours. I haven't sorted that out yet, so for now I'm affixing my business card to the container, which - as you can see above, looks (pardon my French) fan-fucking-tastic. :D

I have more Cuppies to make for this weekend, as well - 2 clients from the same business. I'm looking forward to the continued improvements! :D

Oh, I would (somewhat unfortunately) absolutely love those peanut butter balls if they didn't have peanut butter in them! The idea of the chocolate, crisped rice and coconut together is wonderful.

That's what I'll do tomorrow, I'll make coconut biscuits of some sort - I had been searching for something to do for when my wife gets back...

Now you've got me thinking of a Peanut-Free version of said Peanut Butter Balls. My family has always liked making "monkey candy" which was similar to Clodhoppers...

Oddly I've got the opposite problem. The idea of just chocolate, crisped rice and peanut butter sounds great. The coconut completely killed it for me.

Oooo... NOMS! They all look delicious! I've seen those containers before at stores, they're a good choice for tender baked goods.

Peanut butter balls without peanuts? Caramel maybe, or some kind of vanilla ganache?

The packages are exactly the same containers that I've seen in the store. At least I don't have to engineer anything fancy to hold the product, that would be very costly at this stage. And considering the Cuppies are soft (and a batch I made a couple of weeks ago are still surprisingly soft and edible! I was amazed, since I don't have any preservatives!) they work wonderfully :D

I guess, could they be called "Non-Peanut Butter Balls"?

Did you try actually eating one, though? They might not be stale, but they might not be good, either.

What about "Peanut-Free Balls"? That's how stuff without peanut product in it is usually advertised.

I did try one - the filling was a little chewier than I remember it, but otherwise the flavour was still there. However, I'm not going to use that for an excuse to bake in advance, I like to say that I bake fresh to order :)

Peanut-Free Balls... that could work, couldn't it? Something to think about for a new project... :)

I'm sorry I tease you so. ;_; I would like to test some delivery methods to see if I can send anything through the mail - rest assured, I'll be sure to put you on the top of the list when it does happen. I just hope that I don't end up sending you stale cookies. O_o
